Sexy Fish launches Depths, a four-chapter global cocktail menu, on Oct. 8, 2026, across London, Manchester, Miami and Dubai. It was developed by Xavier Landais, director of beverage at Caprice Holdings, with head bartenders from all four cities, who tasted about 60 drinks at the group’s London Bar Laboratory. Champagne sits alongside the cocktails in every chapter.

LONDON — Sexy Fish launched “Depths”, a new cocktail menu, in London, Manchester, Miami and Dubai on the same night, Oct. 8, replacing four separate drinks lists with one program built collectively by the bars in all four cities. The group is asking a menu to do work a restaurant company usually asks of its interiors: make four rooms in four markets read as one house.
The structure is the argument. Depths is organized as an evening rather than a category, running four chapters that follow the room from the first aperitif to the late-night party. Each chapter carries its own Champagne alongside its cocktails, and each was developed with the guest’s movement through the night as its starting point.
The Menu Is Built Around the Clock, Not the Drink
Surface opens the night with bright, crisp serves: Clover Society (Cygnet 22 Gin, grapefruit, raspberry, lime, Aperitif Rosso), Open Your Eyes (Haku Vodka, Aperol, thyme, strawberry, verjus), and Billecart-Salmon Blanc de Blancs Grand Cru N.V.
Sunlight adds color and weight for the Japanese-inspired kitchen, whose umami-led cooking shapes the pairing: Voy A Mi (Mijenta Blanco Tequila, prickly pear, sage, marigold, honeysuckle), Another Matcha? (Another Hendrick’s Gin, matcha, yuzu, Curaçao), and Laurent-Perrier Grand Siècle No. 27.
Twilight slows the pace for the hours after dinner: Last Dance in Havana (Zacapa No. 23 Rum, guava, corn, coconut, butter), Halcyon (Grey Goose Vodka, chamomile, pandan, passion fruit, yogurt), and Drappier Rosé de Saignée N.V.
Abyss is the late-night chapter, and the builds turn bitter and hot to match: She’s Electric (Condesa Gin, rosé wine aperitif, suze, pomelo, sancho), Coral Margarita (Casamigos Blanco Tequila, yuzushu, watermelon, wasabi), and Perrier-Jouët Grand Brut N.V., poured from magnum.

Champagne Moves Onto the Cocktail List
The defining feature of Depths is structural. Champagne is integrated with the cocktails rather than held on a separate wine list, with one house assigned to each stage of the evening: Billecart-Salmon’s Blanc de Blancs Grand Cru at the aperitif, Laurent-Perrier’s Grand Siècle No. 27 against the umami-led cooking, Drappier’s Rosé de Saignée for the after-dinner hours, and Perrier-Jouët Grand Brut from magnum for the late-night room.
Champagne was already a cornerstone of the Sexy Fish wine program. Depths moves it into the drinks architecture itself, which puts a Champagne order within reach at every point on the list rather than only at the celebration.
Sixty Drinks, Four Bars, One Laboratory
Depths was developed by Xavier Landais, director of beverage at Caprice Holdings, with the bar teams in London, Manchester, Miami and Dubai. Head bartenders from each city came together in London at the group’s Bar Laboratory, where they tasted and refined about 60 drinks before settling the final selection.
“We wanted to create a menu that feels completely true to the brand,” Landais said, adding that the team looked at the experience from the guest’s perspective. He said the four-city collaboration was central to the process and that the menu reflects the creativity across all four bars, with flavor and drinkability kept at the center.
What the Rollout Is Actually Buying
The simultaneous launch is a distribution play as much as a creative one. Sexy Fish opened in Mayfair in 2015 and has since added Miami in 2022, Manchester in 2023 and Dubai in late 2024; a single menu gives the newer rooms the authority of the original without asking each market to build its own drinks identity from scratch.
The group’s bar credentials are the asset being extended. All four locations hold at least one Pinnacle Guide Pin, and London moved from one Pin to two after the guide’s inaugural reappraisal cycle. London was named International Best Restaurant Bar in 2022. Depths also gives the group a Champagne story to sell at every stage of the evening, which is where the average check grows.

Where the Format Is Exposed
The inclusivity claim is the part of Depths that arrives without a line-up attached. The menu names a full-strength build for every drink on the list, and the mid-strength and no-alcohol versions are described as running across each chapter rather than itemized, so the choice the menu is built on is currently a promise rather than a documented range.
The synchronization carries a second cost. A list designed to work in Mayfair, Manchester, Miami and Dubai at once is a list tuned to the middle of four markets, and the city-specific serves and local sourcing that have driven bar programming for the past decade are the first things a single global menu gives up. The four-chapter mood arc, meanwhile, has become close to a house style across international bar groups, which makes the structure read as safe rather than directional.
Depths will be judged in month six, not on launch night, when the four bars have had time to drift apart. Sexy Fish has spent a decade building a drinks program that travels; this is the first menu that has to prove it can travel on the same list in four cities at once.
