Jambalaya with Chicken, Andouille Sausage and Shrimp

If you can’t take the heat, stay out of the kitchen!

Prep Time: 15 min
Cook Time: 30 min
Serves 6-8

2 tbsp Extra Virgin Olive Oil
1 small onion, diced
1 green bell pepper, diced
1 celery stalk, thinly sliced
3 cloves garlic, minced
2 chicken breasts, cubed
12 oz andouille sausage, sliced
14 oz can petite diced tomatoes
salt & pepper to taste
1 tsp thyme
2 cups rice
4 cups chicken broth
1/8 tsp cayenne pepper (advise to use if ONLY using smoked sausage)

In a large saucepan heat Extra Virgin Olive Oil over high heat with onions, peppers & celery, 3 minutes. Add garlic, cook 1 minute. Add chicken, cook until browned on all sides. Add sausage, cook until juices begin to flow. Add tomatoes, rice & broth. Stir to combine. Cover & cook for 15 minutes. Add shrimp & cook for 5 minutes longer.
