Chicken Medallions with Artichokes, Mushrooms and Onions


Chicken is a great “go to” idea for dinner. It is fast & easy to prepare.

Prep Time: 15 min
Cook Time: 30 min
Serves 4
2 tbsp EVOO
salt & pepper
2 tbsp flour
2 chicken breasts, thinly sliced
1/2 onion, sliced
2 garlic cloves, thinly sliced
8 oz mushrooms, sliced
14 oz can artichoke hearts, quartered
1/2 cup sun dried tomatoes, julienned
1/2 tsp rosemary
1/2 tsp thyme
1/2 tsp oregano
1/4 tsp red pepper flakes
2 cups chicken broth
2 tbsp butter
fresh parsley
Slice the chicken breasts in half. Sprinkle with salt, pepper & flour. Heat EVOO over medium/high heat in a sauté pan. Brown the chicken on both sides & remove from pan. Add onions & cook for a few minutes. Add garlic & cook for a few minutes more. Add mushrooms & cook for a few more minutes. Add artichoke hearts, sun dried tomatoes, rosemary, thyme, oregano, red pepper flakes, chicken broth & stir. Add salt & pepper to taste. Add the chicken& butter. Lower heat & simmer for 20 minutes. Sprinkle with parsley & serve.
